I have not kept up with this area but will mention a couple of threads in case you might have missed them. 

ilya Prigogine's non equilibrium theromodynamics has been applied to all sorts of situations.

John Conway's game of life was the beginning of what has since become a substantial body of work on very simple entities interacting within a computer

The Santa Fe Institute has done work in this area.

What you need are agents with simple rules but lots of them communicating.( eg ants, bees )   You then get self regulation.  I think this is what Stafford and Gordon were after ( before their time as usual)

I just wondered if anyone had any good modern links to this type of work
