The 2 places to check would be The Folk Shop (which is part of the Hobgoblin
chain of music shops) which is located at the Cecil Sharp House on Regents
Park Road (nearest subway station: Camden Town), and the Ivor Mairants
Musicentre on Rathbone Place (nearest subway station: Tottenham Court Road),
which specializes in guitars, but also usually has other stringed stuff such
as mandolins, banjos and bouzoukis.
If you're looking for a Greek bouzouki, there is also a shop called Trehantiri,
which is located on Green Lanes in Harringay (so not quite central London).
Most other music shops in London that I know of are located on Denmark Street,
and especially Andy's (at the far end of Denmark Street, on the left) is worth
