When I tried my hand at type design (something I never had enough time
to get deep into, alas), I just made my own graph paper with fine grey
lines in the places I decided I wanted them, and kept sketching away
and changing proportions until I was happy with them. There's certainly
no way you can preset the x-height, bowl height and depth, cap height,
ascender and descender etc etc because not only is it different for
every face but it varies hugely during the design process itself.

The x-height is the height of a lowercase x, as symbolic of the nominal
height above the baseline of all lowercase characters.
